There are around twenty different varieties of cauliflower. Certain varieties of coloured cauliflower are now starting to appear on the markets: green, yellow and purple cauliflower.

Cauliflower is the ideal food to stay slim as it contains over 90% water. It provides 24kcal per 100g and helps to make you feel full.
In addition, this fibre-dense vegetable is good for the digestive system of adults and children alike! However, anyone with sensitive bowels should eat it blanched.
Properties
Cauliflower is a vegetable packed with nutrients:
– it is one of the vegetables containing the most vitamin C. It also contains vitamins B, E and K although to a lesser extent.
– Potassium, magnesium, calcium, iron, zinc, manganese
Cauliflower (belonging to the cruciferous family) contains numerous antioxidants to help prevent heart disease.
A few tips
Cauliflower is available throughout the year so you can eat it whenever you want and vary your recipes. Added bonus: you can swap cauliflower for recipes with broccoli.
Go for a nice, firm, bright-coloured cauliflower (white, purple, green) with tight florets. Check it doesn’t have any black spots.
You can keep cauliflower in the fridge for 4 to 5 days and in the freezer for 6 months (after blanching and draining the florets).
To add even more flavour to this vegetable, you can add herbs when steam cooking.
Babies can start to eat cauliflower from 8 months of age. Make sure he/she is not allergic.
